Fruit curd is a fusion recipe made generally using hung yogurt, strawberry, honey, and blueberries. People love to choose it as a side dish with lunch or dinner. Ingredients to Use for Making Fruit Curd:

  • 1 1/2 teaspoons gelatin powder (optional) 
  • 1 1/4 cups ( 10oz, 280g) granulated sugar 
  • Three eggs 
  • 6-8 passion fruits 
  • Juice from 1/2 lime 
  • Pinch of salt 
  • Six tablespoons (3 oz, 84g) unsalted butter (cut into 1" chunks).

Instructions to Follow To Make Fruit Curd:

  • When you use the gelatin, take a medium-size bowl first, and then you need to bloom in 2 tablespoons of cold water. After that, set it aside. 
  • Now, you have to slice the passion fruits into half pieces. Then, you should scoop out the pulp of the shell and keep it in a blender or food processor. Next, start the pulping method to separate the pulp and seeds. Your job after that is to strain it in a fine-mesh strainer. If you find several pulps stuck to the seeds still now, you have to repeat the process with a little bit of water. 
  • Do it again, and you will have about a 1/2 cup of juice. If you want, add water to get to a 1/2 cup. 
  • After that, your task is to whisk the eggs and sugar together in a medium saucepan. Next, you have to add passion juice, lime juice, and salt. 
  • Hence, you need to keep the butter on top of the bloomed gelatin. After that, take a fine-mesh sieve and put it over the bowl. Then, you should keep the bowl near the stove. 
  • Next, your task is to heat the mixture over medium-low heat. While heating, you need to stir it repeatedly. Ensure that you have kept stirring across the entire bottom and corners of the pot. Thus, you can assure that the custard will not stick to the bowl. The mix starts out opaque with a fine white foam over the surface. 
  • When it heats up, the yogurt will start becoming thicken. As a result, it becomes more translucent, and you will see the foam disappear. 
  • Your job now is to cook until the curd coats the back of a wooden spoon and starts boiling. Make sure that you should not wait for a full boil. Instead, you should only allow 1 or 2 bubbles, which will do the job. 
  • Now, remove it from the heat. Then, your job is to pour it through the sieve over the butter. You can use gelatin, but it is optional. 
  • You need to continue stirring until the butter and gelatin are melted and incorporated. After that, take the bowl and cover it with plastic wrap. When you complete wrapping the bowl, your task is to wait for a while to cool a bit before putting it in the refrigerator. 
  • Finally, your job is to refrigerate it until it gets completely cooled. Whether you use gelatin, you have to keep it for 8 hours or overnight to gel.

Fruit Curd Variations:

You can take 1/2 cup juice from mango, guava, pineapple, etc. After that, your job is to manage the sugar level to taste the type of juice you use. However, if you are willing, use the juice from 1/2 a lime or lemon to spark the flavor.
